Grilled Basil Chicken

Here is a good recipe to try before you put the grill away for the season and one that is super simple to make. Melt one stick of unsalted butter and add a good amount of freshly chopped basil mix together and then generously brush over seasoned chicken tenderloins. Place on medium to high heat grill. This may flare up a bit because of the butter so keep an eye on it and small tenders will cook pretty quickly. Brush any extra basil butter while grilling.

Once you remove from the grill let the chicken rest for a bit to let the meat juices settle and to keep the chicken moist. Then slice and serve, use extra basil to garnish. This is really good served with grilled zucchini and eggplant or fresh sweet corn on the cob.

To give some extra flavor to your chicken, add a pat of basil butter when served. One stick of softened unsalted butter, 1/4 cup of fresh grated Parmesan cheese and a good amount of fresh chopped basil. Mix together and serve with the chicken or slather on fresh bread or corn.
